Challah Pudding

Apparently my husband loves bread pudding.  Its odd how almost 5 years of marriage, and I am still learning some of these things.  Putting it more into prospective, I never gave him an option of bread pudding.  There was no way I would be able to make it without burning down the house.  But those days are over, and here I am with some delicious Challah pudding.  What a great way to end Hanukkah.  Until next year my dear Jewish readers. Challah Pudding 1/2 stick butter 2 cups milk 3...

Rugelach

Posted by on Dec 5, 2010 in Breakfast, Desserts, Recipes | 2 comments

A rugelach is a Jewish pastry of Ashkenazic origin (Wikipedia) and is a common Hanukkah dessert. FYI- these taste even better at room temperature the next day.  I made 32 of them last night and today they are all gone.  For some odd reason, I decided to eat all but one.  I threw the last one in the garbage.  I was feeling like a gluttonous pig, and for some reason, throwing that last one, meant I had some sort of self control. Rugelach (adapted from Jewish Heritage cookbook) 1 stick...

White Chocolate Pomegranate Oatmeal Cookies

Posted by on Nov 19, 2010 in Cookies, Desserts, Recipes | 1 comment

The kids were sick today.  &*$%$%# cold season.  Last time we relocated in the middle of season and the entire family had a virus on moving day.  That was definitely ranked in the top 3 of sucky days.  Today wasn’t even close.  But as the kids were sleeping (comatose from the medicine), I looked around.  There happened to be 6 bags of Oceanspray dried berries lying around (since they were on sale).  The pomegranate was calling my name.  I was...

Because it’s Monday, coconut cookies must be made

Posted by on Oct 18, 2010 in Uncategorized | 4 comments

As I write this, I am eating my fourth….or fifth?  Hmmm, lost count.  Anyways, these are my “go to” cookies.  The most amazing things on the face of the earth.  Whenever I want to cook, but my creativity is dwindling, the Chef always suggest the cookies.  He asked for them last night, and the kids asked for them after lunch today.  I must oblige. Good thing I worked out this morning.  On to the recipe.  Its adapted from a Cooking Light...

Eggplant Parmesan and Blondies

Posted by on Oct 3, 2010 in Cookies, Desserts, Dinner, Recipes | 5 comments

Tonight was the night that I got over my defeat and pushed forward.  What better way than eggplant Parmesan.  I have the new edition of Better Homes & Garden New Cookbook to review, so I decided to use some of their recipes.  The eggplant Parmesan recipe used flour as the breading.  I wanted to use Panko breadcrumbs.  The chef uses Italian breadcrumbs, and my mom just sautes hers in olive oil.  So what to do?  All of it.  The recipe (altered by...

Peach Tarte Tatin

Posted by on Sep 14, 2010 in Desserts, Recipes | 0 comments

Lately, the battle of trying oh-so-hard not to gain weight has been on like donkey kong.  What’s difficult is that I seem to be really good at burgers and pizza.  Not the easiest meals to run off.  So with this in the back of my head, I see my bowl of peaches needing to be used.   So with my gluttonous personality kicking in, I decide rather than eat the peach (not enough guilt for me)….let’s make another tarte tatin.  Without using wax paper this...

Wax Paper is NOT the same as Parchment paper *smacks forehead*

I walked around the entire Charlotte Regional Farmers market searching for apricots….only to find out, they are not a regional fruit.  (for regional Charlotte, NC fall produce click here).  But Baxter Farms, had the most delicious peaches last week, so I bought 2 buckets and another of their nectarines.  The decision was made that a Nectarine Gallette was going to be made tonight. What is a gallette?  good question.  I had to google the exact term, but in a...

Holy Rich Tiramisu

Posted by on Jul 12, 2010 in Desserts, Recipes | 1 comment

Never made it.  And I honestly don’t recall ever eating Tiramisu.  I had nothing to base it on.  What I can say is, eating this gave me a slight headache for a few minutes.  I decided to alter the recipe and change out the cream cheese for whipped cream.  Possibly dropping some calories too.  I cannot understand how anyone would eat something so rich.  Retried the recipe with the cool whip and it was much better.  I can see how some people would...
