Good GOD, I would eat 50 of these suckers if I had the ingredients!

Ingredients
- 1 1/2 teaspoons bottled minced garlic mixed with 1 tbsp olive oil
- 4 (6-inch) pita rounds
- 1 (6-ounce) package portobello mushrooms
- 2 medium tomatoes, cut into 1/4-inch-thick slices
- 1/3 cup (3 ounces) goat cheese
- 1/2 cup chopped fresh basil
Preparation
- Preheat a grill pan over medium heat.
- Combine garlic and oil; brush over pitas, tomatoes, and mushrooms. Place pitas in grill pan and grill just until the garlic is toasted.
- Remove and grill the mushrooms 3 minutes each side. Add the goat cheese to pitas. Top with mushrooms.
- Grill tomatoes for 1 minute. Top the mushrooms with the tomatoes. Add basil and salt and pepper to taste.
- Eat until you start to sound like a goat.
