Vegan Thai Coconut Soup and Lentil Sloppy Joes

These were both adapted form Skinny Bitch cookbook, which has become one of my all-time favorites.  I would say my favorite, since i haven’t come across a book that has deserved THAT title, but definately in the top 10…..and I have gone through a ton of cookbooks.  The Chef LOVED the soup.  The sloppy joes….not so much.  They served their purpose though, and were actually pretty decent. 

And with the vegan month coming to an end, I can honestly say that I really don’t miss meat.  I miss eggs, butter, and milk as ingredients.  They are simply easier to find and use.  I don’t think I will be going back to milk. And I used butter sparingly anyways.  As for the egg, that’s a keeper.  Sorry, to all my new vegan friends. 

Thai Coconut Soup
1 tbsp olive oil
2 garlic cloves, minced
1 tsp ground ginger
1 can coconut milk
3 cups vegetable broth
1 tbsp sugar
3 tbsp fresh cilantro
1 tbsp white miso paste
1 tbsp soy sauce
1/2 cup sliced mushrooms
1/2 cup sliced carrots
1/2 cup sliced brocolli
12 ounces firm tofu, cubed
2 tsp red pepper flakes
1 tbsp basil

Heat oil in a large pot over medium high heat.  Add garlic and ginger.  Cook for 2 minutes.  Add coconut milk, broth, sugar, cilantro, and miso paste.  Simmer for 30 minutes.  Add remaining ingredients and simmer for 15 minutes.  Serve.

    I'm going to make that soup this weekend. The hubs loves Thai coconut soup and tofu. How lucky did I get, that my partner in crime is open to veggie cooking? Side note: How did you decide to go vegan for a month?

    I decided to go vegan just because of my husbands job and my love for food. There are so many people who eat vegan (we did raw too), and I wanted to know their experiences. I like trying new things. Keeps it fun.

    Plus I was hoping i would lose that last 5 pounds…I lost 1.5, my husband lost about 10x that amount.
