Apple Cranberry Cobbler
2 cups cranberries
1/4 cup stevia in the raw
3 apples, peeled and chopped
1/2 cup brown sugar
2 tbsp Gluten Free All Purpose Flour
1/3 cup orange juice
Cobbler
1 cup Gluten Free All purpose flour
1 cup stevia in the raw
1 tsp cinnamon
1 tbsp canola oil
2 tbsp water
2 tsp gluten free baking powder
1/4 cup Earth Balance (vegan butter substitute), melted
Preheat oven to 350 degrees.
In a small pot, place cranberries and stevia, heat over medium heat until the berries begin to pop and the sauce thickens. Remove from pot and add to a large bowl. Add apples, brown sugar, glour, and orange juice. Stir to coat.
In a medium bowl, whisk flour, stevia, and cinnamon. Add the egg substitute (canola oil, water and baking powder) and stir with a fork until crumbly.
In a pie pan, pour fruit filling and top with cobbler. Pour the melted Earth Balance on top. Bake 35 minutes.

This looks amazing. I have been worried about one of my girls sugar intake, and have been wanting to use Stevia in my baking. But I had no idea whether it can be used on a 1-to-1 ratio. I also don't know if it is a good thing for a pre-diabetic diet. (I'll have to google that!) Thanks for the great recipe!
