Coconut Curry Shrimp and a broken coffee machine

I’m writing this as I sneer at my new coffee machine.  I am not a happy camper.  I woke up this morning to NO COFFEE.  And by the way, french presses SUCK, unless they are used casually throughout the day.  Too much work to begin my morning. 

So the Chef and I decided that we would get a new coffee machine without the espresso/cappuccino maker.  Granted, I never used it, but I still want the option.  Its all about the option.  I tried to make my case by asking why my husband carries his golf clubs in his car.  He hasn’t used them in 2 years (due to time constraints) yet still wants the option to golf.  Dammit.  Now I want espresso.

I went with a shrimp and coconut curry again last night.  the last time I tried these flavors was out of Avec Eric.  This recipe was slightly difference since I out it in a quesadilla.  WAY messy.  The Chef ate his over rice and loved it.  I did recently hear something about coconut milk being high in saturated fat, which raises cholesterol, so that will be one thing that will be nixed in the new year.

Coconut Curry Shrimp

2 pounds shrimp, peeled, deveined
1/2 cup chopped cilantro
2 lemongrass stalks, peeled and finely diced
1 shallot, chopped
1 Serrano chile, seeded and chopped
2 tbsp Madras curry powder
1 tsp ground ginger
2 cups unsweetened coconut milk

Heat oil in a skillet over medium high heat.  Add cilantro, lemongrass, shallot, chile, and spices.  Pour in the coconut milk and bring to a simmer.  Add shrimp and simmer 5 minutes, until shrimp is cooked.  Serve over rice, or in a messy, yet oh-so-tasty quesadilla.

    I'm so sorry. If it makes you feel any better, my fiance's dad's girlfriend is trying to sell this gourmet powdered coffee ($40 for 20 packets). We have been drinking powdered lattes for three weeks.

    YUM!!! This sounds delicious!! Love the idea of this in a quesadilla! The messier, the better I believe :)

    I read that coconut's saturated fat is a 'good saturated fat' and there are light coconut milk out there that are still high in fat, but not as bad. We can hope.

    I am LOLing your husband keeping golf clubs in his car just in case he will golf! Options keep you optimistic :)
