White Chocolate Pomegranate Oatmeal Cookies

The kids were sick today.  &*$%$%# cold season.  Last time we relocated in the middle of season and the entire family had a virus on moving day.  That was definitely ranked in the top 3 of sucky days.  Today wasn’t even close.  But as the kids were sleeping (comatose from the medicine), I looked around.  There happened to be 6 bags of Oceanspray dried berries lying around (since they were on sale).  The pomegranate was calling my name.  I was very unsure about how well pomegranate and white chocolate would mix.  But they seemed to work.

My thinking was that oatmeal is healthy, and pomegranates are packed full of antibacterial and antiviral properties…..although Oceanspray pomegranate infused craisins are probably not ranking up there with actual pomegranates.  But we work with what we have.  And besides, a kid waking up from their nap to cookies has got to has some sort of psychosomatic healing powers, right?

White Chocolate-Oatmeal-Berry Cookies

* adapted from Oceanspray craisins*

2/3 cup butter, softened
1 cup brown sugar
2 eggs
1 1/2 cups old fashioned oats
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup of dried berries
1/3 cup white chocolate chunks

Preheat oven to 375 degrees.  In a medium bowl, mix butter and sugar with electric mixer.  Beat in eggs.  In another bowl, mix together flour, oatmeal, baking soda and salt.  Slowly add the butter mixture to the dry mixture.  be sure to mix thoroughly.  Stir in berries and white chocolate.  Spoon onto cookie sheet (I used my handy silpat) and bake for 10 minutes.  Cool on wire rack.  Serve to sick little children and curse the snotty brats that got your angels sick.

    Sorry about the kids being sick. Can't be fun…but these would nurse anyone back to health!
