Last nights dinner was Steak Hash with Poached Egg. As for the recipe, I will definitely be taking out the eggplant. It really didn’t fit, and I wasn’t the only one who disliked it. The Chef also thought that it was out of place. He also informed me that the potatoes were slightly undercooked. Thumbs down for me.
On a more positive note, I poached an egg. One may think, with reading the last two posts, that I have been living under a rock. Not true. I just went from my mom, who never let ANYONE (sorry for yelling, but we really weren’t allowed in her kitchen) in the kitchen, to living alone and eating out all the time, to living with a chef. Not much room to learn how to poach an egg.
Easy steps to poaching an egg
1. Fill a saucepan 2/3 full and boil.
2. Turn down heat. Make sure the bubbles have stopped. Dropping egg in boiling water will make them tough….and pretty gross too.
3. For every gallon of water (approximately) add a tablespoon of white vinegar. If you only have red or balsamic, that’s fine too, but you may end up with a pinkish egg.
4. Crack egg in small bowl.
5. Spin the water with a spoon. Slowly drop egg in the water while moving the bowl with the water movement.
6. Cook 3-4 minutes. Less for a soft poach.
7. Ladle out with slotted spoon.
8. Pat self on back for learning one more thing in the fear room…..I mean, the kitchen.

Everyone should learn to poach an egg – and I too have the fear of trying. Might give it a go from these instructions.
