Friday has become my favorite day of the week, not because its the end of a work week for most, but because its farmer’s market day. Each kids gets $2 and they both spent it wisely. A cantaloupe and a pint of strawberries. Part of my list was greens, a mango, avocado, and some goat cheese.
I came across a recipe for Shrimp, Mango and Avocado Salad with Sweet Chili-Ginger Vinaigrette and decide that is was a must for my calendar of “dinner tonight“. I added the goat cheese, because, well, it’s goat cheese. I can’t think of a better reason. It’s just goat cheese, and its delectable. I can’t stand working with mangos. They are slimy, and slippery, and I am shocked I haven’t cut my hand off this season. But, the one I got was perfect. The avocado, not so much.
The salad was worth the hard avocado. It was wonderful and delicious. I left nothing for anyone else to try. Sorry, but this one is for me.
